Abstract

Production using dairy products is a very common and growing practice in the country, offering a wide variety of products to consumers, and yogurt is one of the main dairy products on the market. This case study sought to analyze the yogurt production process in a family business in the center-west region of Minas Gerais, with the aim of identifying bottlenecks in the production line and presenting solutions. A visit to the dairy factory was carried out with the aim of observing and identifying the bottlenecks present in the company, thus analyzing the yogurt production process from the arrival of the milk to the final product. At the end of the research, bottlenecks were found both in production and in other areas, such as the lack of SOP'S (Standard Operating Procedure), failure to comply with some ANVISA (National Health Surveillance Agency) standards and failure to define the mission and company vision.
