Cafeterias da área central de Caldas Novas, Goiás: componentes da paisagem urbana turística
Abstract
Coffee is originated in Ethiopia, where the fruit was first consumed as a sweet pulp mixed at meals; in Brazil, it was introduced in 1727, with some seeds and seedlings brought from French Guiana. Given this historical and cultural scenario, it aims to analyze the existing coffee shops in Caldas Novas, Goiás main tourist destination, through an exploratory and explanatory field research. Thus, it intended to verify the types of coffees assured in the tourist town, according to the index of the Coffee Quality Program (CQP); and to identify the different forms of preparation offered by commercial establishments, living spaces of residents and tourists. In the second half of 2019, questionnaires were applied to the owners or managers responsible for three coffee shops in the referred municipality. Among the results obtained in the study, it was noted that two establishments (66.66%) offer the traditional product, while one (33.34%) provides special, premium or superior coffees to the customers – there are no commercial establishments offering the gourmet and organic types. Another theme addressed in this research concerns to the preparation of the drink, in which all owners cited the espresso machine as the most used one.
